Cooking time depends on the type of meat, its weight, and the oven temperature.
General roasting guidelines per pound (per kg):

Safe internal temperatures (USDA):
- Poultry (turkey, chicken): 165°F / 74°C
- Beef (medium): 145°F / 63°C (+ 3 min rest)
- Pork: 145°F / 63°C (+ 3 min rest)
- Lamb: 145°F / 63°C (+ 3 min rest)
