General grilling rules:

  • Preheat grill 10–15 minutes (high heat)
  • Let meat come to room temperature before grilling
  • Only flip once for best sear
  • Rest meat 5–10 minutes after grilling (carry-over cooking adds ~5°F)
  • Use a meat thermometer for accuracy
