Yeast Conversions

Yeast conversion is essential when your recipe calls for one type but you have another.

Conversion ratios:

  • Fresh yeast → Active dry: multiply by 0.4 (use 40%)
  • Fresh yeast → Instant: multiply by 0.33 (use 33%)
  • Active dry → Instant: multiply by 0.75 (use 75%)

Key differences:

  • Fresh (cake) yeast: Most perishable, mildest flavor, dissolve in warm liquid
  • Active dry yeast: Needs to be “proofed” (dissolved in warm water before use)
  • Instant (rapid-rise) yeast: Can be mixed directly into dry ingredients, no proofing needed

Standard packet sizes:

  • Active dry yeast packet: 7g (~2.25 tsp)
  • Instant yeast packet: 7g (~2.25 tsp)
