The Science of Sauce Reduction
Reducing a sauce means simmering it until water evaporates, concentrating flavors and thickening the liquid. It’s one of the most fundamental techniques in professional cooking.
What Happens During Reduction
When you simmer a liquid, water molecules escape as steam.
Everything that is not water stays behind: sugars, proteins, starches, acids, and fats.
That concentrates the flavour and changes the viscosity.

Evaporation Rate
The rate of evaporation depends on:
- Pan surface area: wider pans evaporate faster, because evaporation happens at the surface and nowhere else
- Burner power: boiling water off takes a fixed amount of energy, so a weak burner sets a hard ceiling no pan can get around
- Heat level: a brisk simmer in a wide pan clears roughly 15–25 ml per minute
Approximate evaporation rate (brisk simmer):
- Wide sauté pan (28–30 cm / 11–12 in): ~20 ml per minute
- Medium saucepan (20 cm / 8 in): ~10 ml per minute
- Small saucepan (16 cm / 6 in): ~6 ml per minute
Those numbers look low next to the figures you see quoted around the internet, and they are worth defending. Turning water to steam costs about 2,257 kilojoules per kilogram. Evaporating 200 ml in a minute would therefore need roughly 7.5 kW going into the steam alone, when a domestic gas burner produces 1.5 to 3 kW in total and loses much of it around the sides of the pan. The arithmetic simply does not allow it on a home stove.
The kitchen test agrees with the arithmetic. Reducing a full bottle of wine, 750 ml, down to a syrupy 150 ml in a wide pan takes about half an hour, and 600 ml in 30 minutes is 20 ml a minute. If a calculator tells you that job takes three minutes, it is wrong.
Tips for Perfect Reductions
- Start with cold or room-temperature liquids: add them to the hot pan and bring to a simmer.
- Never add salt until after reduction: the sauce can become over-salted as volume decreases.
- Swirl the pan occasionally to prevent burning on the edges.
- Test thickness by spooning: it should lightly coat the back of a spoon for a sauce consistency.
- Remove from heat just before reaching your target: the sauce continues reducing off-heat.

A US cup is 236.6 ml, not the round 250 ml a lot of tables print, and the calculator uses the real figure. Over a single cup the difference is 13 ml, most of a tablespoon, which nobody is going to taste. Over the four cups of a stock reduction it is a fifth of a cup, and that is enough to notice in a finished glaze.
