The thing nobody tells you about waffle recipes is how much the iron matters. A mini iron takes 70 ml of batter and a large Belgian takes nearly four times that, so “makes 6 waffles” on the back of a box is close to meaningless unless it also says which iron. Sizes on the market run from about 60 ml per waffle up to 300 ml, and getting that number right is the difference between a clean batch and batter running down the hinge.
Standard Waffle Batter Ratio (Classic)
The classic waffle batter recipe scales as follows per cup (240 ml) of batter:
- Flour: 60 g (½ cup)
- Baking powder: 2.5 g (½ tsp)
- Sugar: 8 g (2 tsp)
- Salt: 1.5 g (¼ tsp)
- Egg: ½ egg (1 egg per 2 waffles)
- Butter (melted): 28 g (2 tbsp)
- Milk: 120 ml (½ cup)
- Vanilla: ½ tsp (optional)
Half a cup of flour to half a cup of milk looks balanced in the measuring cup, but flour is light: by weight that is 60 g of flour to about 124 g of milk, so the batter is two-thirds liquid. That is what gives a waffle its crisp shell instead of the cakey crumb you get from pancake mix poured into an iron.

Belgian vs Classic Waffles
Belgian waffles use yeast or whipped egg whites to create a lighter, crispier, deeper-pocketed waffle. Classic waffles use baking powder for lift. Belgian waffles generally need a bit more batter per waffle due to the deeper grid.
The Secret to Crispy Waffles
- Do not overmix. Lumps in the batter are fine, and beating them out is what makes waffles tough
- Let batter rest 5 minutes before using to allow gluten to relax
- Make sure the iron is fully preheated before adding batter
- Don’t open the iron during the first 2 minutes. Steam escaping early is what makes waffles stick
- Adding a tablespoon of cornstarch to the dry ingredients significantly increases crispiness
Substitutions
- Dairy-free: Replace milk with oat milk or almond milk 1:1
- Gluten-free: Use a 1:1 gluten-free flour blend
- Extra crispy: Replace 20% of flour with cornstarch
- Richer: Replace milk with buttermilk for a slight tang
