This calculator scales a classic beef chili recipe up or down. The base recipe feeds 4 people generously, at about 1.5 cups per serving.
Base recipe for 4 servings:
- Ground beef: 1 lb (450g). Use 80/20 for flavour, 90/10 if you want it leaner
- Kidney beans: 1 can (15 oz / 400g, drained)
- Diced tomatoes: 1 can (14.5 oz / 400g)
- Tomato paste: 2 tbsp (32g)
- Onion: 1 medium (about 150g), diced
- Bell pepper: 1 medium (about 120g), diced
- Garlic: 3 cloves, minced
- Beef broth: 1 cup (240ml), and adjust for how thick you like it
- Chili powder: 2 tbsp
- Ground cumin: 1 tsp
- Smoked paprika: 1 tsp
- Salt: 1 tsp
- Cayenne pepper: 1/4 tsp (increase to taste)
Scaling tips:
Spices do not scale linearly, and this calculator does not pretend they do. Triple the recipe and it gives you 2.5 times the chili powder, cumin, paprika, and cayenne rather than three times, because heat and aromatics compound in a big pot in a way that volume does not. You can always add more at the end. Pulling cayenne back out is not a thing.
Salt is the exception and does scale straight, since what you are after there is a concentration in the finished mass rather than an aroma. Garlic scales straight too, but treat the number as a floor rather than a target. Adding half a head more than the arithmetic says is rarely a mistake, and the calculator will not do that part for you.
For large batches (12+ servings), use a Dutch oven or stockpot rather than a standard skillet. Cook the beef in batches of 1 to 1.5 lb maximum, or it steams in its own liquid instead of browning, and you lose the fond that carries most of the flavor.
Chili freezes exceptionally well. A batch of 12 servings split into 2-serving containers gives you six ready-to-heat meals. It is also genuinely better the next day, which is the rare case where the leftovers beat the original. Something happens to the spices overnight in the fridge that a long simmer does not achieve on its own.
