Cooking time for roasts is based on weight, the cut of meat, and the target doneness. For beef, lamb, pork and chicken this calculator uses minutes per pound; for turkey it interpolates the USDA table instead, for the reason given further down. Either way, verify with a meat thermometer. Time alone is not reliable: oven calibration varies, meat shape matters, and so does the temperature the roast went in at.
The Two Numbers That Matter
Every roasted meat has two key temperatures:
- Oven temperature, what you set the oven to, usually 325°F to 375°F for whole roasts
- Internal temperature, what the meat reaches at its center, measured with a thermometer in the thickest part
The calculator gives you both, plus the estimated time range to get there.
Doneness and Internal Temperature
Doneness is a band, not a single number, and the figure below is the top of each band. That is the temperature to aim for after resting.

The full bands, which is what a butcher or a good thermometer chart will quote: rare 120 to 125°F, medium-rare 130 to 135, medium 140 to 145, medium-well 150 to 155, well-done 160 and above. The steak calculator uses the same set, so the two pages will not send you two different numbers for the same steak.
Pork at 145°F has been the USDA recommendation since 2011. It is perfectly safe and dramatically juicier than the old well-done-only guideline that most of us grew up with.
Poultry must reach 165°F for food safety. There is no rare or medium for whole birds, because that is the temperature at which salmonella is reliably inactivated.
Stuffed Birds Take Longer
Stuffing slows heat transfer to the center of a bird. For chicken, add 30 to 60 minutes. For turkey the USDA publishes a separate stuffed table and this calculator switches to it, which works out at 15 to 30 minutes more than unstuffed rather than the hour people expect.
The clock is not the real problem with stuffing, though. The stuffing itself has to reach 165°F, and it sits in the coldest part of the bird, so it is almost always the last thing to get there. That is the argument for baking it in a separate dish.
Turkey Is Not a Flat Rate
Minutes per pound is the wrong model for a whole turkey, and it is why so many charts disagree with
each other. A big bird has less surface for its volume than a small one, so it cooks more slowly per
pound but not proportionally slower overall. The rate falls from roughly 20 min/lb at 8 lb to about
12.5 min/lb at 24.
For turkey this calculator interpolates the USDA FSIS roasting table rather than applying one rate to
everything, which is the same model the
turkey cooking time and
Thanksgiving planner pages use. All three now return the
same number for the same bird.
Carryover Cooking and Rest Time
Take the meat out of the oven 5°F before your target. Internal temperature keeps climbing for 10 to 20 minutes after it comes out, which is carryover cooking. Letting the meat rest also lets juices redistribute, so cutting yields tender slices instead of a puddle on the cutting board.
Rest time goes by mass, not by animal. A big joint holds far more heat than a small one and needs longer for it to even out, so this calculator picks the rest from the weight you entered:

Worked Example: 5 lb Whole Chicken
- Oven: 375°F (190°C)
- Estimated time: 5 × 20 to 5 × 22 = 100 to 110 minutes
- Pull from oven when the thermometer (in the thickest part of the thigh, not touching bone) reads 160°F
- Rest 15 to 20 minutes. Internal temperature climbs to 165°F while it sits
- Carve and serve
High-Altitude Note
Above 3,500 ft water boils cooler and evaporates faster, so anything simmered or braised takes longer. Reckon on roughly 5 to 10% more time for every 1,000 ft above that, and check rather than trusting the clock. Roasting is barely affected, because an oven holds its set temperature whatever the altitude. What does change is moisture loss, so a roast at 7,000 ft dries out faster than the same bird at sea level. Tent it with foil sooner than you would at home.
Why a Thermometer Beats Time
Two 5-lb chickens can finish 15 minutes apart based on shape, starting temperature, and individual oven calibration. A basic instant-read thermometer is the most useful thing you can buy for roasting, and the cheap ones are perfectly good. Prices vary by country and year, so shop locally rather than trusting a figure quoted here. Whatever it cost, trust it over the timer every time.
