Jam Sugar Ratio Calculator

Making jam, jelly or preserves is a balance of three things: fruit, sugar and pectin. Sugar does more than sweeten. It helps the gel set, and it preserves by tying up the water so microbes cannot use it.
The classic ratio for traditional jam with no added pectin is 1:1 by weight, equal parts fruit and sugar. That high-sugar method produces a very stable, long-lasting preserve. For 1 kg (2.2 lb) of fruit you use 1 kg of sugar.
Commercial pectin lets you cut the sugar. Low-sugar pectin formulas work at 1 part sugar to 1.5 or 2 parts fruit, and some recipes go as low as 55% sugar relative to fruit weight.
Key ratios by jam type:
- Traditional jam (no pectin): 1:1 fruit to sugar
- Standard jam with pectin: 3:2 fruit to sugar, about 667 g sugar per 1 kg of fruit
- Low-sugar jam with low-sugar pectin: 2:1 fruit to sugar
- Jelly from strained juice: equal weight juice and sugar
- Marmalade: 1:1 to 1:1.2 fruit to sugar
The setting point for a traditional jam is when the syrup reaches 104 to 105°C (219 to 221°F). By then enough water has boiled off and the pectin-sugar bond forms a gel. A pectin jam sets at a lower concentration, so it needs only a short hard boil and never reaches that temperature.
Fruits naturally high in pectin, such as apples, quinces, blackcurrants and plums, set easily with little or no added pectin. Low-pectin fruits like strawberries, peaches and cherries usually need added pectin, or lemon juice for the acidity that lets pectin gel.
How much jam will this actually make?
More than people expect, and this is the question that decides how many jars to sterilize.
Total weight going into the pan is fruit plus sugar. Some of that boils off as water: roughly a fifth for a traditional jam or marmalade cooked to the setting point, and closer to a tenth for a pectin jam that only gets a one-minute boil. Whatever is left is jam.
For 1 kg of fruit and 1 kg of sugar, about 1.6 kg comes out, which is around five standard 340 g (12 oz) jars.
The concentration that results is what makes jam keep. Traditional jam lands near 68% soluble solids, usually written as 68 Brix, and anything at or above 60 is shelf-stable unopened. Low-sugar jams come out in the forties, which is why every low-sugar recipe tells you to refrigerate after opening and use it within a few weeks. The calculator works out the concentration for the ratio you choose and says which side of that line you land on.
Always weigh fruit after preparation, so peeled, pitted and chopped. That is the weight every ratio here refers to.
