Substitute Amount

Lemon juice does two things in recipes: it adds acid and it adds lemon flavor. The right substitute depends on which of those functions matters most.

When flavor matters (dressings, marinades, cocktails)

Lime juice is the best substitute on both counts, same acidity and similar brightness, so use it 1:1. The flavor runs slightly more floral and tropical, which is sometimes an improvement and sometimes just noticeable.

Fresh lemon zest is better than any liquid if you want lemon flavor specifically. One teaspoon of zest contains most of the lemon flavor compounds from an entire fruit.

When acidity matters (baking, leavening, preventing browning)

This is where the usual advice goes wrong, so it is worth being precise. Lemon juice sits around pH 2.0 to 2.2 and is roughly 5% acid by weight. Table vinegars are also about 5% acid. They are comparable in strength, not double.

The “use half” rule you see everywhere is a flavor recommendation: vinegar tastes sharper and more one-dimensional than lemon, so half as much tastes better in a dressing. It is not a chemistry recommendation, and applying it in baking is a real mistake.

For baking, the acid is there to react with baking soda and produce the carbon dioxide that lifts the crumb. Halve the acid and you halve the lift. Use vinegar 1:1 with the lemon juice the recipe called for, and pick white vinegar if you want the reaction without the flavor.

Orange juice is the exception that cannot be scaled around: at pH 3.5 it is roughly thirty times less acidic than lemon, and no practical quantity will do the leavening job. Use it for flavor, never for lift.

Citric acid powder is the most reliable substitute for acidic browning prevention (in fruit salads or cut apples). One-quarter teaspoon of citric acid replaces about 2 tablespoons of lemon juice in acidity, with no added liquid volume.

What is not in the dropdown, and why

Yogurt, sour cream and buttermilk will all react with baking soda, and in a cake or a quick bread they are a perfectly good source of acid. They are not offered above because they are not a swap you can express as a ratio: they bring fat, liquid and bulk along with the acid, so putting them in means rebalancing the rest of the recipe rather than measuring out a different spoonful. Treat them as a recipe change, not a substitution.

Cream of tartar is the other one people ask about. It is an acid salt rather than a liquid, so half a teaspoon plus half a teaspoon of water stands in for a teaspoon of lemon juice in a leavening role, and for nothing at all in a dressing.
