A great ice cream base is the foundation of every scoop. The ratio of cream, milk, sugar, fat, and stabilizers determines the texture, richness, and freeze point of the final product. Understanding these ratios lets you scale recipes perfectly and customize for your ice cream maker’s capacity.
The Two Main Ice Cream Base Styles
Custard Base (French Style) uses egg yolks as an emulsifier and thickener. This is the classic restaurant-quality base: rich, dense, creamy, with a silky mouthfeel. The yolks bring fat and lecithin, and the lecithin is what keeps ice crystals small.
Philadelphia Style (Eggless) skips the eggs, so there is nothing to cook. Lighter and cleaner tasting, which lets mix-ins come through. Slightly icier than a custard base, because nothing is doing the emulsifying.
Standard Ratios (per 1 liter / 1 quart batch)
Custard base:
- Heavy cream: 480 ml (2 cups)
- Whole milk: 240 ml (1 cup)
- Sugar: 150 g (¾ cup)
- Egg yolks: 5 large
- Vanilla extract: 1 teaspoon
- Salt: 1 pinch
Five yolks is the middle of the range you will see published. Four gives a lighter set that tastes more of the cream, six gives something dense and almost frozen-custard. The ice cream batch calculator uses the same five, so the two pages will not send you shopping for different amounts of eggs.
Philadelphia style:
- Heavy cream: 480 ml (2 cups)
- Whole milk: 240 ml (1 cup)
- Sugar: 150–180 g (¾–1 cup)
- Vanilla extract: 2 teaspoons
- Salt: 1 pinch
The Role of Fat Content
Higher fat = creamier texture. Heavy cream (35–40% fat) is the gold standard. Some recipes use a mix of cream and half-and-half for a lighter result.
Sugar and Freeze Point
Sugar lowers the freezing point of ice cream, keeping it scoopable straight from the freezer. Too little and it sets like a brick. Too much and it never firms up properly and melts on the way to the table. Commercial mixes run about 12 to 16% sugar by weight, and the calculator shows you where your batch lands.
The custard base here lands around 15.6% and the eggless one around 18.6%, so one sits at the top of that band and the other clears it. That is deliberate. A home freezer holds around 0°F, noticeably colder than the serving cabinet a commercial tub was formulated for, and the eggless base has no yolk fat to soften it, so both lean on sugar to stay diggable straight from the door.
Stabilizers (optional)
Xanthan gum at 0.1 to 0.2% of the total mix weight is the easiest stabilizer to get right at home, and the calculator gives you that range in grams for your batch. It goes in blended with the sugar, never sprinkled into liquid, or it clumps instantly and never recovers. The job it does is holding water so that ice crystals stay small through the inevitable freeze-thaw cycles of a freezer door being opened.
Corn syrup does a similar job by different means: replace roughly a fifth of the sugar with it and you get a softer, chewier texture that resists crystallizing.
Base volume is not finished volume
Churning whips air into the mix, which the trade calls overrun. Home machines typically add 25 to 50% by volume, so a base of about 900 ml comes out of the machine as somewhere between 1.1 and 1.35 liters of ice cream. Size the batch to your machine’s stated capacity and leave headroom. The calculator reports both numbers.
