Vinegar Strength
Standard cooking vinegar: 5% = 50 grain
Cleaning vinegar: 6-10% = 60-100 grain
Industrial vinegar: 20-30% = 200-300 grain

Vinegar strength is measured in two ways: acidity percentage and grain.

The conversion:

  • Grain = Acidity % x 10
  • Acidity % = Grain / 10

Common vinegar strengths:

  • White distilled vinegar: 5% (50 grain), the standard for cooking
  • Apple cider vinegar: 5% (50 grain)
  • Rice vinegar: 4% (40 grain)
  • Wine vinegar: 6-7% (60-70 grain)
  • Balsamic vinegar: 6% (60 grain)
  • Cleaning vinegar: 6-10% (60-100 grain)
  • Pickling vinegar: 7% (70 grain)
  • Industrial vinegar: 20-30% (200-300 grain)

Safety note:

  • Vinegar above 10% acidity can irritate skin and eyes.
  • Industrial vinegar (20%+) requires gloves and ventilation.

The grain system is a holdover from the days before precise lab measurement, when vinegar strength was gauged during production. It survives mostly on labels and in canning recipes, and the conversion is trivial once you know grain is just the acidity percentage times ten.

Strength matters more than people assume. Safe home pickling and canning rely on vinegar of at least 5 percent acidity, because that acidity is what holds bacteria in check; a weaker “seasoned” rice vinegar can make a preserve unsafe. Cleaning is the opposite case, where the higher-acidity cleaning vinegars cut grease and mineral scale better than the kitchen kind. The safety note above bears repeating: anything past 10 percent can burn skin and eyes, so treat industrial-strength vinegar with real caution.

Diluting strong vinegar down

This is the arithmetic most people actually need, and it is one line:

Concentrate needed = Final volume x (Target strength / Starting strength)

To make 1 litre of 5% vinegar from a 30% concentrate: 1000 x (5 / 30) = 167 ml of concentrate topped up with 833 ml of water. The acid is conserved, the water just carries it, so the same equation works in any unit as long as both volumes use it.

Two cautions on doing this. Add the concentrate to the water, not the other way round, the same rule that applies to any strong acid, and wear gloves and eye protection above about 10%. And do not dilute a concentrate down and then use it for canning unless you are confident of the starting strength, because the whole safety margin of a preserve rests on that number. A labelled 5% bottle is worth the extra money for anything you intend to eat months later.

If vinegar gets on your skin

Flush with plenty of cool running water for several minutes. Do not try to neutralise it with baking soda or anything alkaline: the reaction is exothermic and adds a heat burn on top of the chemical one. For eyes, flush for at least fifteen minutes and get medical attention. Household 5% vinegar is harmless; 20% or 30% horticultural vinegar genuinely is not, and it is sold in ordinary garden centres with very little warning on the label.
